These pumpkin San Jacobos in airfryer will surprise you with their flavor, their crunchy texture, their deliciousness and their healthiness.
We are going to substitute the meat for thin slices of pumpkin, thus providing the recipe with lots of fiber, vitamin A, vitamin C, E and B2, as well as potassium, magnesium and iron.
In addition, instead of frying them, we are going to make them in the airfryer or in the oven, to brown them without losing the crunchy touch, so we can reduce unnecessary calories and avoid fried smells and staining the kitchen.
INGREDIENTS:
- 1 peanut squash
- Slices of ham
- Sliced or grated mozzarella cheese
- Salt and pepper
- Olive oil spray
- Panko or bread crumbs
- Egg

RECIPE ELABORATION STEP BY STEP:
- Peel the pumpkin, and cut thin slices starting with the narrowest part, which is the top and has no seeds. We make as many slices as San Jacobos we want to make.
Pumpkin St. Jacobs in airfryer - Put them in a bowl with plastic wrap and cook them in the microwave for 5 minutes at high power.
- Carefully remove the plastic wrap as the steam will come out and you can burn yourself. You will see that they have released a little water, throw it away and put the slices on plastic wrap to dry them.
- Add a little pepper and salt and fill with ham and cheese, not too much so that you can close them with another slice and then dip them in beaten egg. Do it with both hands to press and that the cheese does not come out, especially if it is grated and not sliced.
- Then bread with panko and if you can't find it, with breadcrumbs, but I like panko because it makes it crunchier.
- Place the St. Jacobs on a baking dish lightly greased with olive oil spray and then spray a little oil on them again.
- Brown in the honro or airfryer for about 15 minutes at 180ºc or until golden brown. Halfway through the browning time, turn them over to brown on both sides.
