And to top it all off, it's a super simple recipe, don't you dare to make it?

INGREDIENTS:

  • 450 gr of cooked beets (3 units)
  • 50 gr of Aove (extra virgin olive oil)
  • 1 spring onion
  • 2 leeks
  • 3 tablespoons soy sauce
  • 1 teaspoon of honey or rice molasses
  • 400/600ml of water
  • 1 teaspoon salt
  • 100 gr feta cheese
  • Sesame seeds

RECIPE ELABORATION STEP BY STEP:

  1. The first thing to do is to remove the green part and the roots of the leeks, wash them if they are gritty and cut them into slices. Do the same with the spring onions.
  2. cold beet creamIn a casserole we pour a little extra virgin olive oil, about 3 or 4 tablespoons. Heat and add the leeks and onion, with half a teaspoon of salt, and stir with a spatula, frying everything over medium low heat for 15 minutes.
  3. To the beets, we remove the woody part that they sometimes have on one of their sides, cut them into pieces and add them to the pot with the rest. Stir and add a small glass of water, the other half teaspoon of salt, the honey and the soy. Let boil over medium heat for 10 minutes.
  4. Blend everything until a smooth and creamy texture is obtained and taste. Rectify the salt or soy, that is, if necessary add a little more. The same with the texture of the cream, if it is too thick, add a little more water, if on the contrary it is too liquid, let it reduce a little more.
  5. Finally, cut a few cubes of feta cheese, which will go great with this cold beet cream because it is sweet, and the combination with the salty of this cheese is spectacular. Serve the cream with the cheese on top, a little bit of sesame, a few drops of Aove, and enjoy!!!
