Couscous salad with turkey, spinach, loquats and dried fruits and nuts

This Couscous salad with turkey, spinach, medlars and nuts, It is a marvel for the summer, fresh and with the seasonal fruit that you like the most. I have used strawberries and loquats that are in season, but also apples, pears... Also, instead of couscous, you can combine it with rice, bulgur, quinoa, even short pasta, such as ribbons, fusilli...

INGREDIENTS: ( 4 persons)Couscous salad with turkey, spinach, loquats and dried fruits and nuts

  • 400 gr turkey fillets
  • 240 gr couscous
  • 240 ml chicken or vegetable broth
  • 50 gr of tender spinach shoots
  • 2 loquats
  • 4 strawberries
  • 50 gr of almonds
  • 4 tablespoons of virgin olive oil
  • 1 tablespoon of honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon mustard
  • Pepper and salt
  • A few leaves of fresh mint (optional)

RECIPE ELABORATION STEP BY STEP:

  1. The first thing to do is to salt and pepper the turkey fillets and grill them until they are golden brown on the outside and then lower the heat until they are done, about 5 minutes. Let them warm and cut into small pieces.Couscous salad with turkey, spinach, loquats and dried fruits and nuts
  2. Couscous is very easy to make. Heat the broth until it almost boils. Pour the couscous in a deep dish and pour the broth over it, with a drizzle of Aove. Cover and let the broth absorb, about 5 minutes. Uncover and stir carefully with a spoon so that it is loose.
  3. We make the sauce: in a bowl add the Aove, the vinegar, the mustard, the skin and a pinch of salt and stir until it emulsifies. You will get a creamy sauce with a toasted color.
  4. Peel the loquats and cut them and the washed strawberries into small squares.
  5. Now you only need to mix everything in a salad bowl: the couscous, with the pieces of turkey and fruit, almonds or the nuts that you like, and the spinach sprouts that are very tender (if you do not like them raw you can also sauté them for a couple of minutes in the pan with a little oil). Drizzle with the sauce, squeeze a dash of lime and chop some mint leaves and sprinkle on top.
