Couscous with chicken and vegetables Moroccan style
This couscous with chicken and vegetables Moroccan style is so easy and so tasty that I encourage you to try it because you will love it.
INGREDIENTS 2 pax:
- Half a cup of couscous
- Half cup chicken broth
- 300 gr of chopped chicken breast
- 1/2 medium chives
- 1/2 zucchini
- 50 gr of pumpkin
- 1 clove garlic
- 5 gr fresh ginger
- A handful of raisins or dried cranberries
- A handful of pine nuts
- A handful of pistachios
- A teaspoon of Ras al Hanout
- 4 tablespoons olive oil
- Some fresh coriander leaves
- A teaspoon of cumin grains
- Lemon squeeze
- Salt
- Pepper
RECIPE ELABORATION STEP BY STEP:
- Finely chop garlic and peeled ginger.
- Heat 2 tablespoons of oil in a skillet and over medium heat, without burning, brown the garlic and ginger.
- Add the diced onion, a little salt, and cook for 7 minutes.
- Add the zucchini and diced squash or carrots, another pinch of salt and cook over medium heat for another 7 minutes.
- Cut the breasts into cubes, season with salt and pepper and add a little ras al hanout.
- Set aside the vegetables on the sides, put another two tablespoons of oil in the middle, add the raisins and pine nuts, toast lightly and then the chicken and brown it, add another bit of ras al hanout (always to taste), the cumin, stir, and cook for another 5 minutes.
- Add the couscous, stir, and add the hot broth. Cook over medium heat until all the broth is absorbed.
Serve and top with chopped coriander, some peeled pistachios and a squeeze of lemon.
