Lumaconi or elbows stuffed with shrimps, mushrooms and vegetables

Today I have the honor of cooking live on instagram with Sergio Fernandez these Lumaconi or elbows stuffed with shrimps, mushrooms and vegetables.

Sergio is a Chef that I admire very much and who has given me so many hours of entertainment and teaching me his recipes during the long hours of breastfeeding my two daughters.

INGREDIENTS: ( 4 pax)

  • Half a package (250 gr) of Lumaconi or galetsLumaconi stuffed with prawns, mushrooms and vegetables
  • 200 gr of shrimp, prawns or shrimps
  • 200 gr of mushrooms varied
  • 2 tablespoons of homemade tomato sauce
  • 1 zucchini
  • 1 carrot
  • 1 onion
  • 1 clove garlic
  • 1/2 glass of broth of heavy
  • 1/2 glass of white wine or brandy
  • 1 teaspoon cornstarch
  • 1 pinch of saffron or paprika
  • Salt
  • Virgin olive oil

STEP BY STEP RECIPE:

  1. The first thing we will do is to boil in abundant water, the lumaconi or elbows (large pasta shells) according to the manufacturer's instructions so that they are al dente.
  2. In the meantime, we are going to cut into cubes or brunoise the vegetables: onion, carrot, mushrooms and zucchini, and chop the garlic very finely.
  3. In a frying pan, pour a splash of oil, heat and fry all the vegetables. When they are poached, add the saffron or paprika, stir and then add the tomato and stir.
  4. Turn up the heat and pour the wine or brandy until the alcohol evaporates, a minute or two.
  5. Then dilute the cornstarch in a little fish stock and add to the pan with the rest of the stock. Let the liquid reduce a little and let the sauce thicken a few minutes.
  6. In another frying pan, sauté the shrimp in small pieces in a little olive oil and add them to the vegetable mixture.
  7. The last step would be to fill the elbows with the help of a spoon and plate them. We can sprinkle a little sauce over them and garnish with a little parsley.

And we have our Lumaconi or elbows stuffed with shrimps, mushrooms and vegetables ready to sit down at the table and enjoy this healthy and nutritious dish.
