Empedrat: white bean and cod salad
This empedrat: white bean and cod salad very typical of Catalonia, is a recipe that we make a lot at home, because it is very healthy, delicious and is done in 5 minutes.
It is also very good for eating legumes in summer, which we sometimes forget about, and we have to remember that they are a great source of vegetable proteins, which have a lot of fiber and nutrients.
The original recipe also has red and green peppers that I have not used this time, as I often resort to what I have in the fridge, and I have also seasoned it in a different way, with orange juice.
Well, read on and you'll see:
INGREDIENTS: ( 4 persons)
- 400 gr of cod in desalted crumbs

- 350 gr of white beans boiled
- 2 hard-boiled eggs
- 12 cherry tomatoes
- 1 red onion
- 12 black olives
- Extra virgin olive oil
- Half orange juice
- Salt and pepper
- Optional: lamb's lettuce and fresh basil
STEP BY STEP RECIPE:
- Use canned beans already cooked (although if you have them in grain, you can cook them until they are tender, with an onion, salt and bay leaf). Empty the pot and rinse them under water and drain them well to remove the liquid.
- In a salad bowl, place the finely chopped onion, the tomato halves, the olives, the crumbled cod (if it is not, crumble it yourself with your hands), the chopped eggs and the beans. Stir with a spatula to mix the ingredients well.
- We make a vinaigrette: in a glass pour the juice of half an orange, half a teaspoon of salt and freshly ground pepper better. Start pouring Aove in a thin stream and whisk with a fork until the sauce emulsifies, that is to say, it becomes thick.
- Pour the vinaigrette all over the salad, stir again carefully so that it mixes well but without crushing the beans. Reserve in the refrigerator as this dish is served cold.
- Garnish with some parsley or fresh basil and add some lamb's lettuce.
