Whole grain oat sponge cake with blueberries, blackberries and walnuts
This whole grain oat cake with blueberries, blackberries and walnuts is one of those with which I enjoy even more our breakfasts or snacks. Because it is a very healthy cake, fluffy and with those blueberries, blackberries and walnuts that bring back memories of the countryside and the forest. By the way, blackberries that we picked the other day with the girls on a walk.
It is a natural sweet and with healthy ingredients that if you also accompany it with tea or coffee, and add a little creme fraiche (semi whipped cream or sour cream), it drives me crazy!
And look how easy it is to make:
INGREDIENTS:
- 200 gr of whole oat flour
- 3 eggs
- 1 yogurt
- 1 measure of oil yogurt
- 1 1/2 measure of organic coconut sugar yogurt or panela sugar
- 1 sachet of baking powder
- Blueberries and/or blackberries
- Walnuts
STEP BY STEP RECIPE:
- Preheat the oven to 180ºc up and down heat with fan.
- Put a little oil in a cake pan and spread all over the inside with your fingers.
- Place the eggs in a bowl and beat.
- Add the sugar and beat until the mixture is frothy.
- Add the yogurt and beat again.
- Then add the oil and whisk until well emulsified.
- Mix the flour with the yeast and add little by little to the previous mixture while whisking.
- It incorporates blueberries, blackberries (I had some freshly picked from a walk in the country with my daughters) and walnuts.
- Bake for 35 minutes.
