Endive with lentils, salmon and avocado salad
More fresh and different salads for this summer! Today we are eating endives with lentil salad, salmon and avocado. Sometimes we make the mistake of not eating legumes when the heat arrives, but many of them, such as lentils, white beans or chickpeas, are ideal for making cold salads.
This is an example, which is also very complete because it has protein, fruit and vegetables. Lots of flavor and different textures:
- 2 endives
- 100 gr of lentils boiled
- 4 slices of smoked salmon
- 1 avocado
- 100 gr of fresh cheese Burgos type
- 1/2 spring onion
- 8 cherry tomatoes
- 4 tablespoons Extra Virgin Olive Oil
- 1 tablespoon of Modena vinegar
- Salt
- Optional: mango or hard-boiled egg
STEP BY STEP RECIPE:
- First, we cut the salmon, cheese, chives, hard-boiled egg, cherry and avocado into brunoise (small squares). .
- We are going to use a bowl to mix all the ingredients. First we add the boiled lentils (they can be canned if you want to simplify), then everything cut in step 1, and with a large spoon and carefully mix everything.
- Make a vinaigrette with the oil, vinegar and a pinch of salt. Put everything in a small bowl and whisk until it emulsifies (it becomes thicker and more blended). Pour the vinaigrette over the salad.
- Take 4 endive leaves and place them on a plate. Fill them with a spoon and add a few extra drops of vinaigrette.
- Optional: I like to add some mango cubes to the salad, it gives it an extra sweetness that goes great, and I personally love the mix of flavors and especially the sweet and sour!
