Cold avocado and apple cream with chicken salad
Today I made a live with @thermomixespaña to make one of their wonderful recipes, a cold avocado and apple cream with chicken salad, This is a healthy and delicious dish that you will love for this summer.
Do you think of guacamole when you see an avocado, or a salad or toast with poached egg or salmon on avocado?
Surprisingly, avocado, which provides us with healthy fats (monounsaturated oleic acid) for our heart, as well as a large amount of potassium and fiber, is very versatile and can be used in a multitude of recipes, sweet or savory, and can be grilled, fried or mashed.
And today, because it is summer, we are going to enjoy a cold cream that will refresh you and that is accompanied with a chicken salad, so it could be a unique dish.
INGREDIENTS: (6 people)
- 400 gr of ripe avocado
- 1 Granny Smith apple
- 1 piece of celery, about a handful
- 20 gr lime juice
- Fresh coriander leaves (3/5 sprigs, to taste)
- 1 pinch of salt
- 500 gr of very cold water
- Freshly ground black pepper
For the salad:
- 300 gr of roasted chicken
- 100 gr red onion
- 3 sprigs of fresh cilantro
- 4 tablespoons mayonnaise
- Juice of half a lime
- 100 gr canned corn
- 1 pinch of salt
STEP BY STEP RECIPE:
- Chop a roast chicken, or use the leftovers discarding the bones. Weigh approximately 300 gr and chop it in a thermomix or food processor, speed 5, 2/3 seconds. It has to be chopped but not a mass. Remove to a bowl.
- Now add the cilantro and the quartered onion and chop again. If you do not like cilantro you can use fresh parsley. With the help of a spatula put it next to the chicken and leave the glass well cleaned of debris.
- Now add the mayonnaise, lime juice, corn and a pinch of salt, and stir with the spatula until all the ingredients are well integrated and the salad is juicy. The amount of mayonnaise is optional as some people prefer more or less, so it's up to you!
- Now we will make the cream. Peel the avocados and remove the stone and put them in the glass. Peel the apple , cut it removing the core with seeds and add it to the glass along with the rest of the ingredients. Again, if you do not like or do not find cilantro, use parsley, as well as celery, which many do not like, in that case dispense with it. Blend at maximum speed for one or two minutes, until the cream is fine and creamy.
- Pour the cream on a deep dish, top with a good spoonful of chicken salad and garnish with a parsley leaf.
