Whole wheat gluten-free muffins with olive oil and tangerine

Are you celiac? Whether you are or not, you are gluten-free whole wheat muffins with olive oil and tangerine you'll love them.

In the ingredients I add a good Aove, extra virgin olive oil,and tangerines, which provide us with vitamin C.

The Aove, an inexhaustible source of health, is rich in vitamins A, D, E and K, although one of the most important properties of EVOO is the prevention of cardiovascular pathologies. This is due to its composition in fatty acids and antioxidants, helping our organism to regulate cholesterol levels in the blood and protecting us against diseases such as arteriosclerosis.

In addition, I use buckwheat Did you know that it is not a cereal and does not belong to the grass family? Therefore, it does not contain gluten. It has a high percentage of protein between 10-13% and contains a high content of amino acids, essential for our development.

Delicious and healthy muffins!

INGREDIENTS: ( 8 units)
  • Juice of 2 tangerinesWhole wheat gluten-free muffins with olive oil and tangerine
  • 70 gr of extra virgin olive oil (Aove)
  • 170 gr flour of buckwheat ecological
  • 2 eggs
  • 1 organic natural yogurt
  • 2 tablespoons of honey
  • 3 tablespoons whole cane or panela sugar
  • 2 teaspoons of yeast
STEP BY STEP RECIPE:
  1. Squeeze the two tangerines and set aside.
  2. Preheat the oven to 180ºc (fan and heat up and down).
  3. In a bowl or with the help of a food processor, beat the eggs with the sugar and honey.
  4. Add the yogurt and beat again until you have a creamy texture.
  5. Add the Aove and beat and then the juice of the mandarins.
  6. Mix the flour with the yeast and add to the bowl and mix well until a homogeneous dough is obtained.
  7. Optionally, we can add a handful of blueberries or raspberries, which are great for these muffins.
  8. Pour the batter into individual muffin pans, only halfway through.
  9. Sprinkle a little sugar on top of the muffins.
  10. Bake for 18º minutes.
