Lentil stew with baby squid
Today I propose a lentil stew with baby squid, as a different way of eating this delicious and healthy legume.
It is a very complete and nutritious dish, high in protein. In addition, for convenience you can use a bag of frozen squid, which are also delicious and you always have them on hand.
INGREDIENTS: (4 people)
- 1/2 kg of baby squid
- 3/4 cup of small lentils (you can use already cooked)
- 2 red onions
- 2 ripe tomatoes
- 1 glass and a half of fish stock
- 1/2 glass of red wine
- A pinch of Saffron
- 1 teaspoon cane sugar
- 1 sprig of celery
- 1 sprig of fresh thyme
- Extra virgin olive oil (Aove)
- 1 lemon
- 2 bay leaves
- Fresh parsley
- Salt
STEP BY STEP RECIPE:
- In a large pot put about 4 tablespoons of Aove and heat over medium heat and cook the onions in julienne strips, along with the finely chopped celery and half a teaspoon of salt, along with the bay leaf. Lower to low heat and cook until the onion is well caramelized, about 20 minutes.
- Blanch the tomatoes (make a small cross at the base and put them in boiling water for a few seconds). This will make it easier to remove the skin. Then cut them in half, remove the seeds and cut them into small cubes.
- Add the saffron to the pot and stir, then add the tomatoes, sugar, thyme, a little grated lemon peel, the baby squid and the red wine, raise the heat and let the alcohol evaporate and then add the fish stock. Lower the heat to medium-low and simmer for about 40 minutes, or until the sauce has thickened and reduced and the squid is tender.
- Meanwhile, in another pot boil the lentils with half an onion, two teaspoons of salt and a bay leaf until al dente (not soft). Depending on the type of lentil it may take 15/ 30 minutes. Drain and set aside.
- When point 3 is ready, add the lentils and stir carefully and cook for about 5 minutes to integrate the flavors. If you like it more broth-like, add a little more fish stock to taste. Taste and adjust salt if necessary,
- When serving add some fresh parsley and a few slices of lemon.
