Hake meatballs with tomato and almonds sauce

One way to include fish in our diet, especially in children's diets are these hake meatballs with tomato and almond sauce.

They are very, very rich, healthy and almonds also provide potassium, magnesium and calcium that strengthen our bones and teeth, take care of our muscles and promote rest.

INGREDIENTS: ( 12/14 units )Hake meatballs with tomato and almonds sauce
  • 350 gr fillets or loins of hake skinless
  • 1 egg
  • 1 sprig of fresh parsley
  • 2 tablespoons bread crumbs
  • Olive oil
  • Salt and white pepper
  • Wheat flour
  • 1 onion
  • 1 clove garlic
  • 400 gr of tomatoes canned peelings
  • 50 ml of white wine
  • 1 teaspoon sugar
  • A handful of almonds fried
STEP BY STEP RECIPE:
  1. Chop the onion and a peeled clove of garlic. In a frying pan or food processor, pour 4 tablespoons of olive oil, heat and fry the onion and garlic with half a teaspoon of salt. If you do it in a frying pan, fry over medium heat for 10 minutes, stirring from time to time. If you do it in a food processor, at speed 1 and 100ºC.
  2. Add the tomatoes and sugar, a pinch of pepper and crush a little with a spatula, stir and pour the wine. Turn the heat up to high so that the alcohol evaporates for a minute or two. Lower to medium heat and cook for another 15 minutes, if you do it in a frying pan and stir from time to time. If you do it in a food processor, at speed 1, temperature 100ºC.
  3. Meanwhile, with the help of a mincer or a food processor, chop the hake. Then add the egg, the chopped parsley, the breadcrumbs, half a teaspoon of salt and a pinch of white pepper. Chop again or blend.
  4. Pour flour on a large plate. With the help of a spoon we take a portion of the dough, to round the meatball with the hand and then dredge it in flour.
  5. In a frying pan pour olive oil, about one finger high, heat at high temperature and brown the meatballs, and remove them to a plate with absorbent paper to remove excess oil.
  6. Once the sauce is cooked, add the almonds and blend at maximum speed, if you are making the sauce in the food processor. If not, pour the sauce into the glass of the blender and blend. Taste and adjust the salt if necessary.
  7. Pour the sauce back into the frying pan, put the meatballs in, cook for 5 minutes over medium heat and they are ready! If you use the food processor, pour the sauce, put the meatballs in the basket, put the lid on and heat on speed 2 at 120ºC for 5 minutes, so that they are done with the steam.
