Whole wheat macaroni with yogurt and cauliflower sauce
If you find it difficult to eat vegetables at home, these whole wheat macaroni with yogurt and cauliflower sauce I assure you that it is a solution for children or adults who do not like cauliflower, to eat it with pleasure 🙂
The sauce I prepare for these macaroni I call it ”false bechamel” because it is very similar, both in its creamy texture and in its color. The good thing is that you can hardly tell it's cauliflower and when accompanied with tomato sauce and grilled cheese, it's great to eat!
Do you dare to try it? let's go for it:
INGREDIENTS:
- 320 gr of whole wheat macaroni
- 100 ml of sheep yogurt or Greek type
- 1 medium chive
- 300 gr of cauliflower
- 1 handful of walnuts or cashew nuts
- Aged sheep's cheese or grated Parmesan cheese
- 3 tablespoons of virgin olive oil
- 100 gr of fried tomato, homemade style
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- Black pepper
STEP BY STEP RECIPE:
- Wash the cauliflower well and chop the onion.
- In a casserole, heat the oil and poach the onion with a pinch of salt until transparent for 10 minutes.
- In the meantime we are going to steam the cauliflower. Either in a steamer or food processor or simpler, in the microwave. I cut the cauliflower into florets and put them in a bowl with a little salt. Cover with plastic wrap and put it in the microwave at high power for 8 minutes. Take it out, carefully remove the plastic wrap as all the steam will come out and you can burn yourself. Pierce, and if it is soft it is done, and if not, cover again and cook for 3 more minutes or as long as it takes.
- Add the cauliflower to the onion, sauté 5 minutes more. Turn off the heat.
- In the meantime boil the pasta according to the manufacturer's instructions and times. You can use the pasta you like the most, of course. Strain the pasta, add a little oil so that it does not clump together, and mix with the homemade tomato in an ovenproof dish.
- Turn on the oven broiler.
- Add the yogurt, cashews or chopped nuts, and stir. Now you have to use the turmix or food processor to blend everything. Add the nutmeg, another pinch of salt and black pepper and blend until you have a creamy texture. Lower with a spatula the leftovers that remain on the walls or lid and blend again. If you see that it is lumpy or too thick, add a little water, or a little more yogurt or milk, until you get a thick but creamy texture like a béchamel sauce. Taste and adjust the salt if necessary.
- Now just pour the sauce over the macaroni, sprinkle with grated Parmesan, cheese, or a mixture of cheeses that you like, and bake in the oven au gratin.
