I'm sure you're wondering how to get it, but the truth is that it's simpler than you think, and richer than you imagine. We do not have to give up those sweet things we like the most. and think that they are bad for our health, quite the contrary, They can even provide us with a lot of nutrients or vitamins!

  • 2 handfuls of california walnuts
  • 6 dates
  • 200 ml coconut milk
  • 2 teaspoons of pure organic cocoa powder with no added sugars
  • 50 gr of chocolate 70% organic cocoa
  • 1 teaspoon coconut oil
  • 1 ripe peach
  • One tablespoon of lemon juice
  • One tablespoon of whole cane or panela sugar
STEP BY STEP RECIPE:
  1. First, with the help of a food processor or blender, we will grind a handful of califonia nuts  to obtain small pieces and Healthy and natural 100% nut and chocolate ice creamswe reserve for the end.
  2. Then grind the other handful of walnuts, this time until you get a nut powder. Add the dates and grind again until you get a paste.
  3. Add the coconut milk and cocoa powder and beat for a few minutes until a smooth cream without lumps.
  4. Fill the ice cream molds, the one you like the most and put them in the freezer. Best from one day to the next so that they solidify well.
  5. Now we will make a light peach puree. Peel a peach, the riper the better, the sweeter. We cut it into small pieces and put it in a saucepan, together with the lemon and the cane sugar. We put it over low heat and stir it from time to time for about 12 minutes. It has to be like ointment. Crush it with the turmix to obtain a light jam. If you want to save this step, you can buy a ready-made one if you prefer. It also depends on the ice cream mold you have. The one I used has a slot in the top center to be able to fill it. If you like the idea but you have traditional molds, fill three quarters with the cream and the final quarter with this jam so that it is bicolor in the base.
  6. Once the ice creams are frozen, take them out and unmold them. With a piping bag where you have put the jam, fill the groove. Refreeze again.
  7. The final step is to chop the chocolate in a bowl and add the oil. Take it to the microwave at medium power so that it does not burn, for one minute. Remove, stir with a spoon so that it melts with the heat and repeat this step until all the chocolate is melted.
  8. Take the ice creams out of the freezer and dip one in the melted chocolate, just the top part (or if you prefer, halfway, so that either the jam slot or the jam base shows if you have used another mold).
