Homemade baked beef stew with diced potatoes

We are going to finish cooking it in the oven. You will see how tender it is. It is better if you use a cast iron pot as it distributes the heat better or more evenly and therefore the stews come out richer.
INGREDIENTS: (4 servings)
- 800 g of diced meat for stewing (I like the "tapilla" or "babilla" which is very tender).
- 2 carrots
- 1 Italian green bell pepper
- 1 piece of celery
- 2 onions
- 2 cloves garlic
- 1 tablespoon of tomato concentrate or 2 tablespoons of fried tomato
- 150 ml glass of red wine ( 3/4 glass) or beer *.
- Meat broth (about a glass and a half) or water
- 3 bay leaves
- A sprig of fresh thyme or teaspoon of dried thyme
- 2 potatoes
- Olive oil
- Salt and pepper
*If you add beer, it is very good to add a spoonful of mustard and a spoonful of jam or applesauce.

ELABORATION OF THE RECIPE STEP BY STEP:
- Season the meat cubes with salt and pepper. In a pot we pour a little oil, about 4 tablespoons and heat over medium-high heat. Brown the meat on all sides and remove to a plate.
- Chop the garlic, onions and bell pepper.
- In the same pot add another little bit of oil if we have run out and add the minced meat with a teaspoon of salt. Poach for ten minutes over medium low heat.
- Add the tomato and stir. Turn up the heat and pour the wine or beer. Stir and after two minutes, when the alcohol has evaporated, lower the heat to medium and add the meat and carrots, peeled and cut into pieces about one centimeter thick.
- We cover with the meat broth, (it is not necessary to put everything, simply that it covers it without going too much so that the stew is not too watery). We put the bay leaf and the thyme and we take to the oven at 180ºc, with the lid on, for an hour. During the baking stir a couple of times or three. It can also be cooked in the fire at medium temperature.
- When you are going to finish, peel and cut the potatoes into cubes, and fry them in plenty of olive oil until golden brown. Add salt and accompany your stew with them.
