Homemade peanut and chocolate ice cream
Do you know Snickers chocolate bars? Well, this homemade peanut and chocolate ice cream reminds me a lot of them. They have the intense peanut flavor and the crunchiness of them when chewed, with the chocolate and caramel mixture if we want to add them as well.
It is super easy and quick to make and thus we avoid thickeners, colorings, preservatives or other additives that are usually added in industrial ice creams.
With respect to the Erythritol, I will tell you a little about it: It is a sweetener It tastes good, in granules like sugar and has only 0.24 calories per gram compared to 4 calories per gram for white sugar (i.e. 16.6 times fewer calories). It is a polyol that occurs naturally in fruits and fermented foods such as corn or wheat and then, in the industrial process, is applied to a known yeast to ferment.
In addition, this sweetener prevents the ice cream from crystallizing when frozen, making it much creamier than if we use white sugar. So in addition to saving calories and avoiding cavities, we get the desired texture!
So I encourage you to try it!
INGREDIENTS:
- 2 Greek yogurt
- 100 ml of cream 35%
- 6 tablespoons of peanut butter
- 100 gr of fried peanuts with honey
- 4 tablespoons erythritol (about 40 gr.)
- Chocolate black 70%
- Optional: liquid caramel
STEP BY STEP RECIPE:
- The first thing to do is to lightly crush the fried peanuts with honey, without pulverizing. Ideally, small pieces should be left. Set aside.
- Then in the same mixer, add the rest of the ingredients except the chocolate and caramel. We beat for two or three minutes until we obtain a homogeneous cream.
- Add half of the crushed peanuts and stir with a spatula to distribute them well in the mixture.
- Pour this cream into an airtight container and store in the freezer for at least 4 hours.
- Break off some pieces of dark chocolate and put them in a bowl and put them in the microwave, at medium temperature so that they do not burn, 2 minutes. Remove and stir and if we see that it has not yet melted completely, put it back in to finish melting and obtain a creamy chocolate. If you want it more liquid, you can add a little butter or a mini splash of cream.
- Remove from the freezer 15 minutes before serving, so that it thaws a little and we can serve it. Place a couple of balls in a bowl, pour a drizzle of melted chocolate and sprinkle a little of the crushed peanuts. Ready!
