Homemade ice cream with natural pistachios
In summer, ice cream is a must, and if you are a pistachio fan, this is the one for you! homemade natural pistachio ice cream you will love it.
It is the favorite of one of my daughters, so we have set to work to make it at home, which is always going to be much healthier and natural as it does not contain additives or industrial fats.
INGREDIENTS:
- 100 g of unsalted and unroasted peeled pistachios
- 250 g whole milk
- 250 g whipping cream (35% fat)
- 2 tablespoons xylitol
- 10 g cornstarch
STEP BY STEP RECIPE:
- Place pistachios in a blender and crush at maximum speed until pulverized. Remove to a bowl and set aside.
- Dilute the cornstarch in a glass with a little of the cold milk. Put it in a saucepan with the rest of the milk, the cream and the xylitol. Place over medium heat and stir continuously for 8 minutes.
- Remove and put it back in the blender, add the crushed pistachios and blend for a few seconds.
- Pour the mixture into a rectangular airtight container so that the height of the mixture does not exceed 3 cm in height. Let it cool and then put it in the freezer overnight or a minimum of 7 hours.
- Remove from the freezer 15 minutes before serving to soften slightly. Before serving, unmold the ice cream and chop it with a knife.
- Put the pieces in the blender and blend until creamy and remove with the help of a spatula.
- Serve it with chopped pistachios on top and I serve it with a raspberry coulis, the contrast is delicious!
