Homemade tiramisu with seasonal strawberries
You have to eat at least 3 pieces of fruit a day, and now, even though it is February, there are strawberries in the supermarket! Homemade tiramisu with seasonal strawberries.
You will see that it is very simple to make, and with a little imagination you can make it with a lot of fruits!
Actually, it's a way of calling it tiramisu, because the cream is the same and it is layered with sponge cakes, but it doesn't have coffee, so the name, whatever you prefer 🙂
Shall we start?
- 24 ladyfingers or ladyfingers
- 200 gr strawberries
For the cream:
- 250 gr mascarpone
- 100 gr cream cheese
- 4 tablespoons powdered sugar
- 2 eggs
For the coulis:
- 300 gr strawberries
- 2 tablespoons powdered sugar
- Juice of 1/2 lemon
- 2 tablespoons of powdered sugar
- 1 teaspoon of balsamic vinegar
- Mint leaves (optional)
RECIPE ELABORATION STEP BY STEP:
- Make the coulis by crushing all the ingredients very well. Use the strawberries that you see more ripe or ugly. If you can't get it fine, you can strain it.
- Separate the yolks from the whites of the two eggs. Beat the two egg whites with 2 tablespoons of powdered sugar until stiff.
- In another bowl, beat the cream cheese with the mascarpone, the two egg yolks and two tablespoons of powdered sugar. Then incorporate the egg whites until stiff peaks and integrate them without beating, with gentle enveloping movements.
- Cut the remaining 200 grams of strawberries into small pieces. Set aside.
- All that remains is to assemble the tiramisu. Choose the mold you like the most, individual type like cups, or a dish or mold. Dip the biscuits in the coulis and begin to form layers. Form the base, then pour a little cream, and so on until you fill the glass or mold. Finish with more cream, strawberry pieces, a little coulis and decorate with mint leaves. If you like mint, you can also add chopped mint to the strawberry pieces and even a few to the coulis.
And now we have our homemade tiramisu with seasonal strawberries which is also spectacular with a mixture of red fruits: blueberries, raspberries and strawberries.
