Cherry cheesecake
It's cherry season! cherry cheesecake Jerte will delight you. We will accompany it with whole cherries and with a sauce, also of cherries, which is finger-licking good.
Did you know that the cherries are full of antioxidants and vitamins, good for the health of your skin and hair and with high anti-aging power? They also help fight constipation, are diuretic and depurative, regulate blood sugar levels and strengthen the immune system, reduce the accumulation of intestinal gas and digestive discomfort and have great anti-inflammatory power.
They are delicious, sweet and very juicy. 
INGREDIENTS:
- 1000 gr cream cheese
- 500 gr of cream 35% MG
- 5 eggs
- 30 gr flour
- 250 gr sugar
- Jerte cherries to cover the cake
For the sauce:
- 250 gr of Jerte cherries
- 100 gr white sugar
- Juice of a lemon
- Pinch of pink or black pepper or mixture
RECIPE ELABORATION STEP BY STEP:
- Beat 1 kg of cream cheese with 500 gr of whipping cream, 5 eggs, 30 gr of flour and 250 gr of sugar.

- Wet a sheet of baking paper and wring it out and use it to line a 24-26 cm diameter springform pan and pour the mixture into it. .
- Preheat the oven to 200 degrees with heat up and down and bake for 50 minutes. Even if it is still liquid when you stir it, it will set on its own but will leave that creamy texture.
- While the cake is baking, we will make the cherry sauce. Wash them well and remove the stone. Put them in a saucepan with the sugar, the strained juice of a lemon and a pinch of pepper. Bring to the boil and cook over medium heat for about 30 minutes, stirring occasionally and crushing the cherries. It should have a texture somewhat less thick than a jam, but if you prefer thicker, it will also work, don't worry, if you see that it caramelizes too much or is burning, lower the heat. Mash and let stand.
- Turn off the oven, open the door and let the cake temper.
- Cover the tart with the cherry sauce. Let cool and decorate with cherries.
