Lemon sponge cake with icing
It's Friday again! lemon sponge cake with icing is going to be our breakfast this weekend. It is nice with this weather to give a fresh and citric touch to our homemade cake, so here I leave you this recipe based on the classic yogurt cake and you can also customize it according to the fruit that you like, just add the flavor of yogurt that you like, even put pieces of fruit inside the cake or fruit mashed or grated (for example, I would put the apple, grated, a peach in syrup mashed, strawberries in pieces, pear, if it is ripe also mashed or if not pieces, experiment and play, it's fun, use the measure of the glass of yogurt for the quantities.
- 1 lemon yogurt
- The measure of the glass of soft olive oil yogurt
- 2 measures of panela or brown sugar
- 2 and 1/2 wheat flour
- 3 eggs
- Royal yeast sachet
- Glaze: 150 g icing sugar and lemon juice
- optional; poppy seeds or chia seeds for garnish
STEP BY STEP RECIPE:
- Beat the eggs in a bowl, add the yogurt and beat. Then add the oil and whisk until everything is well emulsified.
- Then the dry ingredients: the sugar and beat until frothy.
- Sift the flour and baking powder and add it little by little while whisking so that there are no lumps.
- Grease a cake pan, turn out onto the table and bake for about 30/35 minutes at 180ºc.
- Remove and let cool. Make the glaze, which is simply mixing in a bowl the sugar with lemon juice little by little. With a spoon you are moving vigorously until you have a creamy texture .... the texture you have to leave it so that it is not lumpy or too thick, but not too liquid. You pour it on top of the cake and ready! It is very cute if you also decorate with poppy seeds or chia seeds to decorate.
