Salmorejo ligero sin pan y proteico

¿Qué os parece si os cuento que puedes hacer un salmorejo ligero sin pan y proteico?

Es tan sencillo como sustituir el pan por huevos cocidos y un podo de queso ricotta o requesón, que le va a aportar mucha proteina y una cremosidad increíble. ¿Lo probamos?

INGREDIENTS: ( 4 servings )
  • 1 kg of tomatoes pear type
  • 1 clove garlic
  • 3 huevos duros (cocidos)
  • 1 cucharadas de queso ricotta or ricotta cheese
  • 4 tablespoons of Aove
  • 1 teaspoon salt
  • 2 tablespoons sherry vinegar
  • Para decorar: huevo duro y jamón ibérico picados , perejil o cilantro
RECIPE ELABORATION STEP BY STEP:
  1. First wash the tomatoes well, remove the stem part, chop and throw it in the blender.
  2. Peel the garlic clove, remove the germ and throw it together with the tomatoes.
  3. Añade también el aceite de oliva virgen extra, el vinagre, la sal y el queso ricotta o requesón
  4. Quita la cáscara a 2 huevos y échalos con el resto.
  5. First beat at low speed and then increase the power and beat for 5 minutes until creamy.
  6. Taste and adjust the salt and/or vinegar to taste.
  7. Let it cool in the refrigerator.
  8. A la hora de servir, decora con el otro huevo picado, un poco de jamón ibérico picado también , un chorrito de Aove y unas hojas de perejil o cilantro.
