This lentil salad with confit artichokes is a very complete and healthy recipe, as well as delicious.

There are hundreds of ways to eat legumes in salad with the advantage of being able to buy them already cooked. Just use your imagination and combine them with your favorite salad ingredients.

On this occasion, I have prepared some candied artichokes that you can eat in a thousand ways: not only in salad, but also with a little burrata and tomato, or with egg and ham, etc.

You will see how delicious this lentil salad with candied artichokes is.

Ingredients for 4 servings:

  • 1 jar of lentils cooked (350-400gr)
  • 8 artichokes
  • 12 cherry tomatoes
  • A jar of mozzarella balls
  • 3 eggs
  • Oregano
  • Fresh basil leaves
  • Lemon
  • Extra virgin olive oil (Aove)
  • 2 hours of bay leaf
  • Parsley branch
  • Salt and pepper

Recipe elaboration step by step:

  1. We clean well the artichokes, Remove enough layers to leave the tender part or heart of the artichoke. While you prepare all the artichokes, soak them in lemon water to prevent them from oxidizing because they turn black immediately.
  2. Drain them well and put them in a saucepan all together on the base, tight or crimped together, not on top of each other. Put a little salt and pepper on them and cover them with Aove (do not overdo it with oil, just enough to barely cover them).
  3. Add the parsley and bay leaf and cook over medium heat for about 20 minutes, until soft when pierced with the tip of a knife (a light boil, not too strong because otherwise they will be fried and will be fried instead of candied). Leave to cool.
  4. Boil the eggs for 12 minutes so that they are hard boiled.
  5. In a large bowl, place the lentils washed and drained, the cherry tomatoes, the hard-boiled eggs in small pieces, the mozzarella, a little oregano, some basil leaves, salt, pepper, juice of half a lemon, and the artichokes with all the oil.
  6. Stir carefully mixing everything well and taste. Add salt, pepper and/or lemon juice if necessary.
