Vegan gluten-free chocolate tartlet with no added sugars
Never think that eating sweets and desserts is unhealthy! vegan gluten-free chocolate tartlet with no added sugars. Does it seem impossible? Well, no, and besides, it is super easy to make and does not require an oven, just to rest in the fridge for a few hours!
And I explain; it is vegan because it has no eggs and all the ingredients are vegetable, it is gluten-free, because I do not use wheat or its derivatives, and has no added sugar, because I replace sugar with dates, and the chocolate I used is also without added sugars. Let's get to work! I used small tartlet molds of 12 cm in diameter, but you can make a big one in a 24cm mold.
INGREDIENTS: ( for 3 tartlets)
For the base:
- 40 gr of chocolate 70% with no added sugars
- 1 tablespoon coconut oil or coconut butter
- 15o gr of dates boneless
- 150 gr of nuts
For the filling: Option 1 :
- 1 can coconut milk
- 50 gr coconut oil or coconut butter
- 100 gr of 70% chocolate with no added sugars
- 150 gr pitted dates
For the filling: Option 2:
- 300 gr of sweet potato roasted
- 150 gr dark chocolate
- 4 dates
To decorate:
STEP BY STEP RECIPE:
- We melt the chocolate in pieces together with coconut butter in the microwave for about 20 seconds. Take it out, stir it so that it melts with the heat and if not, put it back in for another seconds.
- In a food processor, we grind the dates and the nuts until a paste is formed. With the help of a spatula we lower the remains, and grind again. Add the previous mixture and stir.
- We line the tartlets with silver foil and put a quantity of the dough on the bottom and flatten it, trying to get a bottom layer not too thick and also covering the edges. Reserve in the refrigerator.
- For the filling option 1, we grind again in the food processor the dates until we obtain a paste and melt again the corresponding part of chocolate and butter, which we add to the robot together with the dates already in the robot.
and the coconut milk, and blend again until a homogeneous cream is obtained. Fill the tartlets and let cool for at least 3 hours.
- For the filling option 2, mash the skinless roasted sweet potato, dates and melted chocolate. To roast the sweet potato, I washed two medium sweet potatoes, pricked them with a fork and put them in a bowl with plastic wrap in the microwave on high power for 8 minutes. When you take them out, they should be soft when pierced. Wait for them to warm up because they burn, and you will see how easy it is to remove the skin. Fill the tartlets and put them in the refrigerator.
- Take out and decorate with cherries, raspberries, crunchy almonds or mint leaves... whatever you like or have!
