Healthy vegan brownie with chickpeas, chocolate and peanuts
There are recipes that surprise me, like this one healthy vegan brownie with chickpeas, chocolate and peanuts.
I have called it brownie because the texture is very similar, but it really only has the chocolate chips that I put on top. Another option would be to add 3 tablespoons of pure chocolate powder, but I'll do that version another day!
And I say that I am surprised, because I have always associated chickpeas to stews or savory foods, but for some time now I have been using legumes for sweet recipes, and they are wonderful! This way you get healthier recipes, providing all the nutrients, plus a lot of protein, which refined flours do not provide.
Change the chip and dare! You'll be amazed ....
INGREDIENTS:
- 1 jar of 400 gr of chickpeas cooked
- 3 tablespoons cream of peanut 100%
- 1 teaspoon vanilla essence
- 2 tablespoons of honey
- 1 tablespoon of panela or cane sugar
- 1 tablespoon of nut milk or vegetable milk (soy, oat...)
- 50 gr of dark chocolate 70% no sugar added
- 1 teaspoon of baking soda
- 1 teaspoon of yeast
STEP BY STEP RECIPE:
- Preheat the oven to 180ºc.
- In a blender, mix the chocolate and chop into small pieces or use dark chocolate pearls. Remove and set aside.
- Add the chickpeas and mash for one minute.
- Add the rest of the ingredients except the chocolate and blend again for another minute.
- Grease a medium mold, or several small ones (I used two small ones of 15x10cm) and pour the dough. Then spread the chocolate pearls or chocolate chips on top.
- Bake for 35 minutes.
And you already have this one ready healthy vegan brownie with chickpeas, chocolate and peanuts.
