These chanterelles or pickled mushrooms, If you are lucky enough to be able to pick them yourself, it is one of my favorite autumn dishes.
Did you know that mushrooms have a low caloric content due to their high water content but that they provide a lot of fiber, protein, and B vitamins (B1, B2, B3 and B5)?
The chanterelles promote the circulation of oxygen, the lack of which can cause migraines and fatigue. The vitamin B3 contained in these mushroomss also helps to strengthen the defenses. They also provide a lot of vegetable iron and potassium.

INGREDIENTS: (4 servings)
- 200 gr of chanterelles
- 1 onion
- 1 carrot
- 100 ml white vinegar
- 100 ml extra virgin olive oil
- 3 bay leaves
- 1 handful of peppercorns
- 1/2 teaspoon paprika
- 1 teaspoon thyme or rosemary
- 4 cloves of garlic
- Salt

- First, we will prepare the vegetables. Peel and cut the onion into strips, peel the garlic cloves and peel and slice the carrot.
- The chanterelles must be clean, so do not wash them. With the help of a brush or damp cloth carefully remove the remains of sand or weeds that they may have.
- In a frying pan with bottom, add a drizzle of oil and lightly brown the garlic over low heat, add the onion and carrot, half a teaspoon of salt and cook over medium heat for 5 minutes.
- Add the paprika and stir, and add the chanterelles (cut them into pieces if they are very large), sauté for another 5 minutes.
- Add the vinegar, being careful that it may splash, and cook for another two minutes.
- Then add all the oil, bay leaf, peppercorns and thyme or rosemary and cook over medium heat for 15 minutes.
- They are ready! If you let them rest until the next day in a taper in the refrigerator, much better, because the flavors will be more intense. In addition to being pickled, this stew will keep well for at least a week.
- Accompany it with rice, quinoa or couscous, or simply with a good loaf of bread!
