Oatmeal and pumpkin pancakes
What an idea! the other day I had some leftover pumpkin that I roasted in the oven and, as we don't throw anything away at home, I thought of adding it to the pancake batter! I also used oat flour instead of the normal wheat flour, and the result couldn't have been more delicious! oat and pumpkin pancakes , You will be surprised!
INGREDIENTS for 6 pcs:
- 1 egg
- 75 ml milk
- 70 gr oat flour
- 2 tablespoons roasted pumpkin puree with a tablespoon of sugar
- 1 heaping teaspoon yeast
- Pinch of cinnamon, salt and bicaronate
FOR ACCOMPANIMENT OR TOPING:
- Apple squares
- Lemon squeeze
- 2 tablespoons brown sugar
- 1 tablespoon butter
- 6 walnuts
- Butter for making the pancakes
- 1/2 teaspoon cinnamon
- Creme Fraiche or fresh cream
- Honey
STEP BY STEP:
- Place all the ingredients in the blender and blend until smooth.
- Heat the butter in a frying pan until it melts, add the apple, lemon and brown sugar. Leave over medium heat for about 5 minutes or until we see that the liquid has evaporated. Add the cinnamon, stir and the walnuts in small pieces and our garnish is ready.
- In the same frying pan melt a little butter, pour the pancake batter over medium heat, and when it starts to make little bubbles, turn it over. Like this with all the pancakes.
- On a plate we put 2 or 3 pancakes per person, a little of the prepared apple, and it is delicious if we put a little honey on top and a spoonful of fresh cream, a delight!
