Vegan whole wheat oat, spelt and zucchini sponge cake

A vegan whole grain oat, spelt and zucchini sponge cake , It could be called “brownie” because as you can see in the photo, the texture is very juicy thanks to the humidity of the zucchini. It is a recipe very intense in flavor and very pleasant to accompany with coffee, tea or a glass of milk. It is quite filling like the brownie, so with a little piece you will be satisfied and happy to have something so healthy and tasty.

INGREDIENTS:

  • 200 gr of grated zucchiniVegan whole wheat oat, spelt and zucchini sponge cake
  • 50 gr of crushed walnuts
  • 100 ml olive oil
  • 125 gr of dessert chocolate, minimum 55% or 70 gr of pure cocoa powder
  • 125 gr of panela
  • 50 gr whole oat flour
  • 50 gr whole wheat spelt flour
  • 50 gr of whole wheat flour
  • 12 gr of baking powder
  • Pinch of salt
  • Dash of vanilla essence

STEP BY STEP RECIPE:

  1. In a bowl, and with a whisk, mix the agave with the olive oil and the dash of vanilla, until the two ingredients are well blended.
  2. Melt the chocolate, previously chopped, in a bain-marie, or, as I do since it is easier for me, I put it in the microwave at medium temperature (360º) for one minute, take it out and with a spatula stir it and put it back in for another minute. I take it out again and stir it and with the heat and the movement of the spatula it melts completely. I add it to the previous mixture and beat it well.
  3. With the help of a sieve, sift the flours, yeast and salt over the previous mixture and stir with the whisk little by little.
  4. Finally, I incorporate the walnuts that I will have crushed until they are like lentils in size (that is, I do not pulverize) and the zucchini that I will have finely grated once clean and with skin (and removed the ends).
  5. Pour the mixture into the mold we like the most, not too big (maximum 20 cm in diameter) or in a cake mold (my case).
  6. I put it in a preheated oven at 180ºc, about 25 minutes. I always do the knife or stick test before taking it out, if you put it all the way in and it comes out dirty, it means that the dough is still raw!
