This oriental chicken and vegetable salad is very original and the oriental touch makes it different and very tasty. It is a very nutritious salad with lots of vegetables, which together with the chicken protein, makes it a very varied and complete dish.

INGREDIENTS: (1 serving for 2/3 persons)
- 300 g chicken breast
- Several leaves of oak lettuce
- 1 red onion
- 1/2 broccoli floret
- 2 tablespoons extra virgin olive oil
- Juice of 1/2 lemon or lime and its zest
- 2 clove garlic
- 1 piece of fresh ginger (about the size of a walnut)
- 1 chili pepper
- Handful of cashew nuts
- Fresh cilantro
- Spoon of sesame seeds
- 100 ml soy sauce
- 50 ml of water
- A spoonful of sweet chilli
- Salt, pepper

- First, sauté the chopped garlic cloves with two tablespoons of oil together with the chopped ginger and a chili pepper.
- Sauté over medium heat, the red onion cut into strips, the half red and half yellow bell pepper also in strips, and the chopped Chinese chives for 5 minutes.

Add 1/2 cooked broccoli and stir.
Add 100 ml teriyaki or soy sauce + tablespoon cane sugar and a spoonful of sweet chili sauce and stir cook for 5 minutes.
