Potato waffles with pico de gallo and avocado

These potato waffles with pico de gallo and avocado, They have been a real discovery! A quick and delicious dinner or starter that can be served with almost anything you want!

I have added pico de gallo with avocado and others with anchovies, but it would also look great with ham and melted cheese, with salsa brava only, with tuna and chives, with salmon and cream cheese, with a poached or fried egg on top... Just use your imagination!

INGREDIENTS: (4  rations)
  • 4 potatoes medium-sized
  • 8 cherry tomatoes
  • 1/2 red onion
  • 1 avocado
  • A bunch of fresh coriander
  • Extra virgin olive oil
  • 1 lime or lemon
  • Salt
  • Pepper
  • Optional : anchovies
STEP-BY-STEP PREPARATION: (click here to see video-recipe)
  1. The first thing we will do is wash the potatoes, put them in a microwave safe bowl, add a little salt and cover them well with plastic wrap.
  2. We cook them in the microwave for approximately 7 minutes. This will depend on the size of the potato and the type of potato. If you spend too much time it can be rough, or even burnt, so take them out, prick them and if they are soft they are ready ¡ and be careful when removing the film paper that with the steam you can get burnt.
  3. Meanwhile we make the pico de gallo, which is as simple as chopping and mixing the tomatoes, onion and chives and seasoning with a little salt, lime or lemon and olive oil.
  4. I add the peeled and diced avocado and stir.
  5. Once the potatoes are cooked, heat the waffle iron, pour a few drops of oil and put a potato in each hole. Close and cook for about 7 minutes, or until you see that they are lightly browned.
  6. Remove, place the waffle on the plate and top with pico de gallo and optionally some anchovies.
