Homemade chocolate, pistachio and blueberry nougat with extra virgin olive oil

This homemade nougat with chocolate, pistachios and blueberries has the peculiarity that it is made with extra virgin olive oil, which makes it healthier and very, very creamy.

It is an easy way to make this Christmas candy and that it also allows many versions, so let your imagination run wild!

INGREDIENTS: (6 sticks)
  • 200 g of dark chocolate minimum 55% cocoa
  • 30 gr of olive oil
  • 100 gr of shelled pistachios (or the nut of your choice)
  • 50 gr dried cranberries
  • One teaspoon salt flakes
RECIPE ELABORATION STEP BY STEP:
  1. Chop the chocolate and place in a microwave-safe bowl with the oil and heat on medium power for 2 minutes.
  2. Remove from the microwave and stir with a spatula so that all the chocolate melts and emulsifies well with the oil. If it has not completely melted, reheat for another minute and stir again.
  3. In a chocolate mold, in the shape of your choice, preferably in small slabs, pour a handful of chopped pistachios, a few blueberries and a few flakes of salt and finally cover with the melted chocolate until the mold is filled.
  4. Let it cool in the refrigerator until it solidifies and all that's left is to unmold and enjoy.
