Salmon with crunchy nuts and sweet potato
With this recipe of salmon with crunchy nuts and sweet potato will bring tears to your eyes.
You already know that salmon is a very healthy food with high biological value protein, omega 3, or cardio-healthy fat and an important amount of vitamins and minerals.
If you don't have time to go to the fishmonger's, you can always visit a quality frozen salmon, and have it always at hand.

INGREDIENTS: (4 pax)
- 4 loins of salmon bofrost
- A small piece of fresh ginger
- 1/2 tablespoon dijon mustard
- 1 tablespoon of honey
- 4 tablespoons mayonnaise
- Juice of half a lime or lemon
- Salt
- Pepper
- 3 handfuls of nuts, the ones you like best
- 2 tablespoons natural oat flakes or natural corn flakes with no added sugars
- Fresh cilantro or chives
- 8 seedless grapes or one pomegranate
- 1/2 tablespoon of honey
- 1 sweet potato
- Aove (extra virgin olive oil)

RECIPE ELABORATION STEP BY STEP:
- The first thing to do is to make a marinade. Take a bowl and add the mustard, the mayonnaise, a spoonful of honey, the juice of half a lime or lemon, and the zest of the peel and grate a cube of fresh ginger without peel. Stir.
- Put the loins of salmon in a baking dish and brush with the sauce.
- Put the nuts (I like pistachios, cashews, almonds, hazelnuts, a mix or just one, whatever you like) in a mortar or blender and crush into small pieces.
- In another bowl put these nuts, with the corn flakes also in small pieces or oat flakes, a little salt and pepper, a dash of Aove, the pomegranate seeds or grapes in small pieces and a spoonful of honey and chopped chives or coriander to taste. Stir.
- Put this mixture on top of the seasoned loins and bake (preheated oven) at 180º C for 7 min. It depends on the thickness of the loins, your oven, and if you like it more or less done. salmon.
- Peel the sweet potato and make slices one centimeter thick. Place them separately in another baking dish with salt and pepper and a little Aove and bake them at the same time as the salmon. They will be ready when they are soft when pricked with a fork (about 25-30 min).
I accompany this salmon with crunchy nuts and sweet potato with a base of bulgur, quinoa or couscous, and the dish is already super complete! but even more so if you have a salad or some vegetables as well.
