Salmorejo without protein bread and with mango
Would you believe me if I told you that there is a way to make a salmorejo without protein bread and without mango? You're amazed, aren't you? Well, I am too, and it's delicious!1
A way to replace the bread with ricotta that will provide a lot of protein and an incredible creaminess. The mango will give it a sweet touch, but without being excessive and curiously it doesn't taste like mango, it gives it a very special touch. Do you want to try it?

INGREDIENTS: ( 4 servings )
- 1 kg of tomatoes pear type
- 1 clove garlic
- 1/2 handle
- 3 tablespoons cheese ricotta or ricotta cheese
- 4 tablespoons of Aove
- 1 teaspoon salt
- 2 tablespoons sherry vinegar
- To garnish: raspberries and basil leaves
RECIPE ELABORATION STEP BY STEP:
- First wash the tomatoes well, remove the stem part, chop and throw it in the blender.
- Peel the garlic clove, remove the germ and throw it together with the tomatoes.
- Also add the extra virgin olive oil, vinegar, salt and ricotta or ricotta cheese.
- Peel and chop the mango, remove the stone and put half of it together with the rest of the ingredients. Keep the rest in a taper in the refrigerator for dessert.
- First beat at low speed and then increase the power and beat for 5 minutes until creamy.
- Taste and adjust the salt and/or vinegar to taste.
- Let it cool in the refrigerator.
- When serving, decorate with some raspberries, or if not, you can also put some pieces of mango that you had left over, with some basil leaves and a few drops of Aove.
