Tarte tatin of seasonal peaches with vanilla ice cream
The season for yellow, sweet, juicy peaches is right now. This seasonal peach tarte tatin with vanilla ice cream is a great option if you have peaches that are going to spoil or are ugly to bring to the table, although of course, it can be done with freshly purchased and beautiful peaches.
Did you know that now in September most of the yellow peaches come from Aragón and Lérida, and that they are harvested at just the right point of ripeness, which is why they are so sweet and tasty?
INGREDIENTS:
- 8 yellow peaches
- 70 gr of butter
- 4 tablespoons brown sugar
- Juice of half a lemon
- 1 teaspoon cinnamon
- 1 sheet of puff pastry dough
- 1 egg yolk
STEP BY STEP RECIPE:
- Peel the peaches and cut them into more or less regular pieces.
- Melt the butter in a frying pan, add the diced peaches and stir.
- Add the brown sugar, juice and cinnamon and caramelize over medium heat, stirring occasionally until caramelized and all the juices have evaporated.
- In a round baking dish, place the filling in the center. With the help of a spoon, mound it towards the center, leaving a couple of centimeters free at the edges.
- We take a sheet of puff pastry, if possible round, and put it on top covering the whole peach. On the edges what we do is to press a little and shape it, turning the excess dough to make it nice and well closed so that it cooks well.
- Prick with a fork and brush with egg yolk so that it takes golden color when baking.
- Bake in a preheated oven at 180ºc until golden brown.
- Ready! and serve warm with vanilla ice cream.
