Thousand leaves of caramelized vegetables with tuna and mozzarella cheese

This thousand leaves of caramelized vegetables with tuna and mozzarella cheese is a super fresh and flavorful dish to enjoy in these summer days.

Canned tuna in this case, are very useful for countless recipes, providing high quality protein and omega 3, as you know, essential for good cardiovascular health.

INGREDIENTS: ( 4 servings)
  • 2 cans of quality canned tuna fish
  • 2 fresh mozzarella or burrata balls
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 20 cherry tomatoes
  • 1 onion
  • Aove
  • 2 teaspoons of brown or panela sugar
  • 1 teaspoon oregano
  • Salt and pepper
  • Optional: fresh chives

STEP BY STEP RECIPE:
  1. Wash the peppers and tomatoes. Cut the peppers into thin strips.
  2. Peel the onion and cut it into strips.
  3. Place all the vegetables in a baking dish and drizzle with a good splash of extra virgin olive oil (Aove).
  4. Add the salt, fresh pepper, oregano and sugar and stir.
  5. Bake at 180ºc for 20 minutes. Stir once or twice during baking.
  6. When they are ready, let them warm.
  7. With the help of a cooking ring, approximately 10 cm in diameter, we are going to plate. Place the ring on the serving plate, fill it almost to the top with vegetables, pressing lightly.
  8. Cut the mozzarella into slices and place 3 slices on top of the vegetables, then the diced tuna and optionally, some chopped chives.
  9. Remove the ring and you have this delicious thousand leaves of caramelized vegetables with tuna and mozzarella.

You can make this dish with the vegetables you like the most, and use other preserves such as sardines, octopus, mackerel, etc. Do you dare to try it?
