The hummus is a popular dip or spread originating in the Middle East, made mainly from ingredients such as cooked chickpeas, tahini (sesame paste), olive oil, lemon and garlic.

INGREDIENTS:
  • 180 g cooked chickpeas
  • 1 tablespoon tahini (sesame paste)
  • 2 tablespoons extra virgin olive oil
  • Juice of 1/2 lemon
  • 1/2 clove garlic
  • 1/2 teaspoon ground cumin
  • 2 tablespoons of water

FOR BONIATO or SQUASH HUMMUS WE ADD:
  • 150 gr of roasted pumpkin or 1/2 sweet potato without skin roasted

FOR THE BEET HUMMUS:
  • 1/2 cooked beet

.

FOR THE AVOCADO HUMMUS:
  • 1/2 avocado
  • 5 pitted black olives

.

RECIPE ELABORATION STEP BY STEP:
  1. Just put all the ingredients in the blender and blend until very creamy. At the beginning and sometimes the blades get stuck, so you will have to stop the blender and use a spatula to stir and blend again.
  2. Always taste for salt or lemon or cumin or tahini. 
  3. Add a little more water if it is too thick or lumpy. To make it creamier, beat more and add a little more water.

  • To make it even smoother and more velvety, before beating, take the chickpeas with your hands, rub them without crushing them and some of the chickpea skins will come off. Remove them.
  • Also, if you put in a couple of ice cubes when you start whisking, it will help the chickpeas to break up and mash better.
