Wholemeal vegan sponge cake with spelt, banana and nuts
There are no excuses for eating a healthy sweet, because this vegan whole wheat spelt cake with banana and nuts, is 100% natural and provides many nutrients, minerals and vegetable proteins.
It is also suitable for vegans, is very easy to make and is very satiating. It contains a high percentage of fiber and provides all the benefits of nuts, healthy fats and many minerals!
INGREDIENTS:
- 2 ripe bananas
- 120 gr of whole wheat spelt flour
- 4 tablespoons of peanut butter
- 2 teaspoons of yeast
- 160 ml vegetable milk
- 4 tablespoons of panela or whole cane sugar
- 1 pinch of salt
- Dried fruit to taste: hazelnuts, walnuts, cashew nuts
- Optional: dark chocolate drops 70% ,
STEP BY STEP RECIPE:
- Preheat the oven to 180ºc and grease a 22×22 cm baking pan with a little olive oil.
- In a blender put the peeled bananas and the milk. Blend for one minute.
- Stir in the peanut butter and panela and beat again for half a minute.
- Add the flour and the pinch of salt and yeast, and beat for a few seconds until well integrated. You can finish mixing well with a spatula.
- Add the nuts of your choice, assorted or single variety, and stir with the spatula.
- Pour the mixture into the mold. Optionally, sprinkle with a few drops or pieces of 70% chocolate.
- Bake at 180ºc for 25/30 minutes.
