Turkey tonnato with tuna sauce
Today I propose a fusion proposal, a turkey tonnato with tuna sauce, which is eaten cold with that mayonnaise based on tuna, anchovies and capers, which is delicious and very tasty.
Actually, the original Italian recipe is called vitello tonnato, which means veal with tuna. They use a white veal, but I have used a round that I had of turkey and the result has been great, as well as more economical.
It is a super easy recipe that you will like a lot.
INGREDIENTS:
- 1 turkey round or two turkey breasts in mesh
- 5 anchovies
- 120 gr of canned tuna in oil
- 30 capers approx.
- Sunflower oil
- Lemon
- 1 egg
- Salt
- Peppercorns
- 2 bay leaves
- 1 onion
- 1 carrot
- 1 leek
- Parsley or chives
RECIPE ELABORATION STEP BY STEP:
- The first step is to have the turkey round in a mesh, like the usual veal round. If you can't find it you can buy turkey breasts and do it yourself with kitchen string. Season with salt and pepper.
- Put a pot with plenty of water to immerse the round and bring it to a boil. Add the turkey, bay leaf, peppercorns, the leek without its roots in pieces and the carrot and onion, peeled and also in pieces, and a tablespoon of salt. Let it boil over medium low heat for two hours, making sure that the round is covered with broth. When it is finished, let it cool and then let it rest in the refrigerator in the broth itself, overnight.
- The next day, remove the round, remove the string and fillet with a sharp knife. The fillets should be very thin.
- We make the sauce with the help of a turmix. Put in your glass, an egg, squeeze half a lemon, half a teaspoon of salt, and two fingers of sunflower oil. Put the mixer in the base of the glass and as it thickens, add more oil until you obtain a sauce that is neither thick nor liquid.
- Incorporates 15 capers, 5 anchovies and 120 grams of tuna fish and beat again, this time making up and down movements with the turmix to help mix everything well.
- Place the fillets on a plate and spread the sauce to taste and some whole capers on top. Chop some chives or parsley and sprinkle.
