Whole grain oat flakes pancakes

Happy Father's Day! It's a strange coronavirus situation, but we can celebrate this special day at home if we start with a healthy and delicious breakfast, with these whole grain oat flakes pancakes. 

At home it is one of our favorite breakfasts, but due to lack of time and rushing every morning, we take advantage of the occasional weekend to make them, but now without school and teleworking, we take advantage!

I leave you the basic recipe, but then add on top whatever you like: this time I propose a savory version, with scrambled egg and turkey bits, and a sweet one, with walnuts, cranberries, maple syrup and cream cheese. which one do you like more?

INGREDIENTS: (for 10/12 pancakes) Whole grain oatmeal pancakes with scrambled egg and turkey

  • 200 gr of whole grain oat flakes
  • 250 ml of vegetable milk (oat, nut, soy...)
  • 2 eggs
  • 50 gr of sunflower oil or butter
  • 50 gr honey or cane sugar
  • 1/2 teaspoon of yeast
  • 1/2 teaspoon baking soda
  • Toppings: whatever you like!

STEP BY STEP RECIPE:

  • With the help of a food processor we grind the oat flakes, until a flour is formed.
  • Separate the egg yolks from the egg whites. I reserve the egg whites in a separate bowl and whip them until stiff with a whisk.
  • I add all the ingredients (except the whipped egg whites) together with the flour and beat until a cream is formed.Whole grain oatmeal pancakes with walnuts fresh cheese and blueberries
  • Pour this mixture into the bowl of whipped egg whites, and mix gently with wrapping movements from top to bottom, as if forming circles, so that the egg whites do not drop.
  • Reserve at least 10 minutes in the refrigerator.
  • In a frying pan put a little butter or oil, pour a small amount until a small circle is formed and over medium heat let it cook. I flip the pancake when it starts to get a few small bubbles. I flip the pancake and brown the other side.

And ¡ready! all that's left to do is enjoy these whole grain oat flakes pancakes with whatever you like best as indicated above, savory or sweet, they are always a delight!
