Whole grain oat sponge cake with chocolate and nuts
There is nothing better than waking up in the morning and having ready to eat breakfast with a whole oat sponge cake with chocolate and nuts and accompany it with some fresh fruit and a hot coffee or tea, isn't it?
INGREDIENTS:
- 3 eggs
- 1 plain organic yogurt
- 1 measure (of yogurt glass) of olive oil
- 1 1/2 measures (from a yogurt cup) of panela or whole cane sugar
- 1 1/2 cup (yogurt cup) measure of whole wheat flour
- 1/2 measure (of yogurt cup) of whole oat flour
- 1 sachet baking powder
- 100 gr dark chocolate
- Walnuts
STEP BY STEP RECIPE:
- Pour the yogurt contents into a glass and use the yogurt container as a measure.
- Turn on the oven and preheat to 180ºC.
- In a bowl, break the 3 eggs and beat.
- Add the panela and beat again until it forms a froth.
- Now add the oil and beat until creamy.
- Then add the yogurt and whisk.
- Pour all the flours and yeast in a fine sieve and sift over the previous mixture. Pour at the end also the fiber that has remained in the sieve. Stir with a few sticks until you have a homogeneous mixture.
- Chop the chocolate and walnuts and pour into the mixture and stir.
- Grease a cake pan with a little oil, pour the batter, and bake for about 35 minutes. Pierce with a knife and check that it is cooked. If it comes out clean, it is smooth!

A idea of utilization! I had whole oat flakes that I did not consume and I have crushed them in a food processor until it becomes flour, and that is what I used for this recipe.
