Peach and grape tartlet with oat and walnut base

Who said that eating sweet is not healthy? With a 100% fruit juice and no added sugars, I'm going to teach you how to make this easy peach and grape tartlet with oat and walnut base.

The base is very healthy, all with natural ingredients, based on oats that provide us with lots of protein, fiber and minerals, such as walnuts, a great source of omega 3 or heart-healthy fat, and honey, a natural sweetener full of vitamins and minerals.

The filling is as simple as mixing a quality natural juice with a little coconut milk or cream and just a spoonful of whole coconut sugar. Shall we get to work?

INGREDIENTS:

*For 2 tartlets of 12 cm or one of 24 cm diameter.

  • 100 ml of Granini 100% fruit juice peach and grape at room temperaturePeach and grape tartlet with oat and walnut base
  • 60 gr oat flakes
  • 2 teaspoons of melted coconut oil
  • 1 tablespoon of honey
  • 20 gr of peeled walnuts (3/4 units)
  • 2 gelatin sheets ( approx. 3.5 gr)
  • 30 ml of cream or coconut milk at room temperature
  • 10 grams of whole cane sugar, coconut sugar or panela sugar
  • Grapes, blueberries and mint leaves for garnish

STEP BY STEP RECIPE:
  1. Hydrate the gelatine leaves in a bowl with cold water.
  2. For the base, chop the walnuts with the oat flakes in a food processor.
  3. Then add the coconut oil and honey. Fill the base of a small tartlet (10 cm) with this mixture and bake at 180ºc for about 10 minutes or until golden brown.Peach and grape tartlet with oat and walnut base
  4. In a bowl put the  100% Granini peach and grape fruit juice, not cold, the sugar and the cream or coconut milk (not cold either) and whisk. 
  5. Drain the gelatin and melt it for a few seconds in the microwave and add it to the previous mixture and whisk again. If you have lumps it is because the mixture was cold. Put it in the microwave for a few seconds at not very high power. Remove and stir again.
  6. Cover the tartlet with the filling and let it cool in the refrigerator until it solidifies.
  7. Decorate this peach and grape tartlet with oat and walnut base with some mini grapes, or slices and some mint leaves, and blueberries.
