Whole wheat spelt, flaxseed, chia and apple sponge cake
This whole wheat spelt, flaxseed, chia and apple sponge cake is a healthy and delicious way to incorporate into our body the necessary fiber, vegetable protein, as well as omega 3 and minerals such as magnesium and manganese, which help us to maintain good cardiovascular health, reduce fatigue, maintain our bones and protect our cells against oxidative damage.
As always, an easy recipe without the slightest complication:
INGREDIENTS:
- 3 eggs
- 1 apple grated
- 1/2 cup breakfast of whole wheat spelt flour
- 1/2 cup of Linwoods Cinnamon Flaxseed and Chia seeds with Cinnamon
- 3 tablespoons of honey
- 3 tablespoons of hazelnut cream
- 100 ml of linseed or sunflower oil
- 1 sachet of yeast
- 3 cardomom seeds
STEP BY STEP RECIPE:
- In a bowl, break 3 eggs and beat them (you can do it by hand or with a mixer).
- Add the honey and beat again. If it is too thick you can give it a touch of heat in the microwave but be careful not to let it boil.
- Add the hazelnut cream, which in my case I make naturally, simply crushing peeled and natural hazelnuts until it becomes creamy (if you do not get a creamy texture you can add a little bit of mild olive oil or sunflower oil or a splash of milk). We beat.
- Pour in the oil and whisk again until well emulsified.
- Incorporate the dry ingredients: put the seeds, which in my case is a mix of Linwoods but you can put the ones you like the most or just one of them and stir. Sift the flour, together with the baking powder, over this mixture and stir again. If you do it in a mixer at medium-low speed.
- Finally add the peeled and grated apple and stir.
- In a mortar and pestle, crush 3 cardomom seeds and discard the husks and add the seeds to the mixture.
- Grease a cake pan, pour the mixture and bake for 30-35 minutes at 180ºc with fan. Prick to check that it is ready. Check that the tip of the knife is not sticky or dirty.
- Sprinkle a little powdered sugar on top and it's ready to taste!
