Squid sandwich on brioche bread

Who wouldn't like to have a calamari sandwich on brioche bread? to give it a more modern touch I have used this type of medium sweet bread that suits it perfectly, but of course, you can use the bread you like the most.

INGREDIENTS: ( 8 mini brioches )
  • 500 gr fresh squid
  • 4 brioche breads
  • Chickpea flour or special flour for batters
  • Butter
  • 1 egg
  • 1 lemon
  • Sunflower oil
  • 1 clove garlic
  • Salt
STEP-BY-STEP PREPARATION:
  1. We clean the squid if they are fresh. Remove the belly and the cartilage or spine. We cut very thin rings.Squid sandwich on brioche bread
  2. In a deep dish we put the chickpea flour or breading and flour them.
  3. Heat a good amount of oil in a frying pan. The oil must be very hot so that they are crispy. Fry the squid in batches and remove them with the help of a skimmer and leave them on a plate with absorbent paper to remove the remaining fat.
  4. To make the homemade mayonnaise, In a glass of turmixer, put an egg, a clove of garlic without the germ, a dash of olive oil and a dash of lemon juice and half a teaspoon of salt.
  5. Start whisking and adding sunflower oil little by little until you get the texture of mayonnaise you like. The more oil you add, the thicker it will be. Taste and adjust salt and lemon juice if necessary.
  6. Now all that remains is to make the modern sandwich. Flatten some slices of brioche bread with a rolling pin until they are very thin. Cut the edges and cut two equal squares or rectangles and then sandwich them together. Brush with melted butter and brown them in the oven or toaster. Approximately 10 minutes at 160ºc or until golden brown.Squid sandwich
  7. Now just brush the brioche with a little mayonnaise, put a few squid, close it with the other part of the brioche. For the presentation we can put it standing up, as the bread is crunchy, it will stand up.
  8. If you prefer the traditional way, use the bread loaf you like best and stuff it with squid and mayonnaise to taste.
