Zucchini ribbons with walnut pesto salad

This is the first time I have made this salad of zucchini ribbons with pesto of california walnuts inspired by a dish I tasted the other day in a restaurant, I have made it my way and I am going to include it in one of my favorite salad recipes!

It is delicious, very varied, and very healthy, full of Omega 3 from the walnuts and all the vitamins, nutrients and fiber from the vegetables, and of course, easy to make.

Here's how I made it:

INGREDIENTS: ( 2 pax)
  • 60 gr of California walnuts
  • A zucchini of the coarse
    Zucchini ribbons with walnut pesto salad
  • 10 cherry tomatoes
  • Burrata or mozzarella
  • Sprouts
  • Blueberries
  • 50 gr Parmesan cheese
  • 40 gr fresh basil leaves
  • 100 ml extra virgin olive oil + a splash of extra olive oil
  • Salt
STEP BY STEP RECIPE:
  1. We peel the zucchini and cut it in two lengthwise. With the same help of the peeler (the potato peeler), we make thin and wide strips, from the top of the zucchini, to the bottom, until we can not do more because it narrows and there is little left of the zucchini.
  2. We make a pesto sauce but with california walnuts instead of pine nuts. Besides adding a lot of Omega 3, it is much more economical: in a blender glass put the walnuts, the grated Parmesan cheese, the basil leaves, the oil and a pinch of salt. I do not put the garlic that is usually put to this sauce because I find it very strong raw garlic, but if you like, add half or even a clove of garlic. Blend until you get a thick sauce.
  3. In a frying pan pour a little oil, heat it and sauté the zucchini ribbons over high heat for 3 minutes, turning them with movements of the frying pan. Add a little salt at the end.
  4. Cut the cherry tomatoes into 4 small pieces each.
  5. Now all that remains is to plate: put the burrata or the mozzarella ball in the middle of the plate, around the sprouts (I have used kale sprouts but whatever you can find or none at all) and around the ribbons, the tomatoes on top of the burrata and some blueberries scattered. Dress with the pesto sauce and ready!
