Gazpacho with raspberries, feta cheese and pistachios
At home we love gazpacho, and as we drink so much of it, I have decided to make different varieties to brighten up the palate a bit. So today I propose a gazpacho with raspberries, feta cheese and pistachios.
The raspberries give the gazpacho a sweet and at the same time acid touch that will surprise you. Besides, by adding some pistachios and a little feta cheese the explosion of flavors is great!.
- 250 gr of raspberries
- 700 gr of pear tomatoes
- A clove of garlic
- 1/2 spring onion
- 1/2 red pepper
- 1 cucumber
- 2 tablespoons sherry vinegar
- 50 g of olive oil
- 1 teaspoon salt
- Pistachios and feta cheese
STEP BY STEP RECIPE:
- Mash everything together. I do it in the thermomix and I don't need to pass it through the chinois. But if it is not your case and you have lumps, it is better to strain it.
- Garnish with raspberries, chopped pistachios and a little feta cheese.
