In the summer, they always feel like fresh, light recipes, but at the same time, we will not go hungry! baby broad bean salad with figs, is quite complete, and different from the ones we usually make at home, but it is very easy, and in addition, we take advantage of the figs as a seasonal fruitAnd if you have guests or friends for dinner or lunch at home, they will love it! It is a recipe a little bit gourmet, and the presentation, too.

 

 

 

INGREDIENTS for 4 :

  • 1 small jar of baby broad beans in oil (the better the quality, the thinner they will be)
  • Lamb's lettuce and arugula (they sell bags with this combination already washed and ready to serve).
  • Iberian ham, about 5o gr. (the better it is, the better the flavor result).
  • Fresh goat's or cow's cheese, about 10o gr. (according to preference)
  • 3 figs
  • Mint leaves (about 6)
  • Vinaigrette: extra virgin olive oil, balsamic vinegar, salt and honey (optional).

STEPS TO FOLLOW:

  1. Cut into small squares (like a dice), the figs, the avocado (sprinkle with a little lemon juice so that it does not oxidize or turn black) and the cheese. Chop the ham finely, as well as the mint leaves.
  2. In a salad bowl, put all the above together with the lamb's lettuce and arugula. Reserve in the refrigerator.
  3. When you are going to serve the salad, make the vinaigrette, if you like the touch of honey (which goes very well if you use goat cheese, which is a little stronger), add half a teaspoon to the vinaigrette.
  4. Pour the vinaigrette over the salad, and stir from bottom to top so that all the ingredients are well mixed.
  5. For the plating, I use some cooking rings. I place a small size on the plate, fill it with the salad, pressing lightly at the end so that it is firm and does not fall apart when the ring is removed (but be careful not to press too hard). I remove the ring, and the result should be the one in the photo! If you see that you have fallen short when dressing it, you can add a little more vinaigrette on top.
