Baked codfish with sobrasada and honey
A few weeks ago I was in Menorca and I tasted a baked codfish with sobrasada and honey I loved it. So much so, that I bought a nice homemade sobrasada and brought it back home.
I managed to make this dish that from now on will remind me of the fabulous summer my family and I spent on that wonderful island.
Make a note, because it is very easy, and this “Sea and mountain” combination is amazing, in addition to the sweet touch of honey that contrasts with the salty touch of both the sobrasada and the cod.
INGREDIENTS:(4 servings)

RECIPE ELABORATION STEP BY STEP:
- The first thing to do is to peel the potatoes and onions. The first ones we cut them in thin slices and the second ones in julienne strips.
- Pour about 4 tablespoons of oil in the frying pan, heat and add the potatoes and onion, add half a teaspoon of salt and put on medium-low heat. Add half a teaspoon of salt and set the heat to medium-low, cook for about 15 minutes, stirring occasionally so they don't stick together.
- Preheat the oven to 200ºc.
- When they are ready, spread them in a baking dish, place the cod loin on top (I did it in one piece but you can put it in pieces if you prefer), spread the sobrassada (without the skin or tripe) in slices on top of the cod, and pour a drizzle of honey on top.
- Bake for about 25-30 minutes. This will depend on the type of oven and the thickness of the fish. If you put it in individual pieces in 10-12 minutes it will be ready, what I do is open the oven, and with a knife and fork open a little in the center to see if it is done or not, for which, look if the meat is already white and falls apart is ready, but if there is resistance with the fork, a little hard meat and is opaque, is that it is still a little raw.
