Homemade Gazpacho of seasonal watermelon
Let's take advantage of the last of the watermelons to make this homemade seasonal watermelon gazpacho, delicious recipe full of vitamins, antioxidants, fiber...
The contrast of the sweetness of the watermelon with the acidity of the tomato and vegetables is delicious.
INGREDIENTS : ( 4 servings)
- 500 gr of seedless watermelon
- 4 ripe tomatoes
- 1 cucumber
- 1/2 Italian green bell pepper
- 1/2 red onion
- 50 ml Aove (extra virgin olive oil)
- 20 ml apple cider vinegar or sherry vinegar
- 1 teaspoon salt
- Pepper to taste
- To decorate1 cucumber, 8 cherry tomatoes and a few basil or mint leaves
RECIPE ELABORATION STEP BY STEP:
- Put in a blender the peeled cucumber, the tomatoes well washed and without the top and bottom, the bell pepper without the seeds and also washed and half a red onion. Blend for 3 minutes.
- Add the watermelon, salt, oil, vinegar and a little pepper. Blend for 5/7 minutes from low to high speed, until everything is well blended. At this point, taste and adjust the salt, pepper and/or vinegar to taste. You can also add a little water if you like it lighter.
- Peel and thinly slice the other cucumber and cut into halves the cherry. Garnish in a circle alternating the cucumber and cherry halves and interspersed with basil leaves.
- Finally, a splash of Aove. .
