Cashew nut and dark chocolate cream cookies
You are at cashew cream and dark chocolate cookies are a delight. We largely replace the butter for a cream of cashew nuts.
This nut is very good for your cardiovascular health, as it reduces bad cholesterol. They also help us to rest better, to fight anemia and even provide folic acid for the development of the fetus if you are pregnant, and has a large amount of magnesium and copper, for good bone health and formation of red blood cells.
In any case, they are not light cookies, but a sweet treat once in a while does not hurt. If you want to make them healthier, try making them with oatmeal, and replace the sugar with erythritol and dispense with butter by increasing the amount of cashew cream.

INGREDIENTS:
70gr of cashew nut cream- 40 gr of butter
- 100 gr dark chocolate 70%
- 150 gr flour
- 1 large egg
- 30 gr white sugar
- 70 gr of brown sugar
- 1/2 teaspoon vanilla essence
- 1 teaspoon of yeast
- 1/2 teaspoon baking soda
- 1/2 teaspoon of salt
RECIPE ELABORATION STEP BY STEP:
- The first thing to do is to chop the chocolate into small pieces. With the mixer it will only take a few seconds, we don't want it to be powdered. You can also use chocolate tears. Set aside.
- With the help of a mixer or food processor, beat the butter with the cream so that they are well integrated.
- Then add the eggs, vanilla and the two types of sugar and beat again at medium speed.
- Finally the rest of the ingredients, which are the dry ingredients and mix at low speed to make a dough and add the chopped chocolate and stir with a spatula, because if we do it with the mixer it will be chopped smaller. I like to find small pieces of chocolate.
- With your hands take the dough and form small balls the size of a meatball. Put a baking paper on the baking tray, and place the balls apart and flatten them slightly with your hand, not too much because then they will melt slightly and become bigger and flatter.
- Bake at 160ºc for 10 to 12 minutes.
- Option B is to make these cashew cream and chocolate cookies black frying pan! simply grease a medium-sized frying pan a little, put all the dough or the amount you see fit to fill the entire base, flattening it with your hand so that it is not too thick. Leave it over medium heat until you see that it is cooking. The time will depend on your fire, the thickness, the size... between 5 and 10 minutes approximately. Keep in mind that when it cools it will harden and it is a delight to eat it warm with ice cream on top!
