Quinoa salad with apple, avocado and walnuts

It's hot, and it's cool. quinoa salad with apple, avocado and walnuts, will be your perfect ally to accompany your meals or to be your dinner!

In case you didn't know, quinoa is a pseudocereal, that is to say, it does not belong to the grass family, but it has certain similarities in texture, flavor and shape with cereals.

  • Specifically, is a seed and  the only plant food containing all essential amino acids and vitamins.
  • Gluten free  so it is suitable for coeliacs.

  • It is rich in vitamins B, C and E complex. 
  • It provides up to 23% of protein.

For all these reasons, you know, incorporate the quinoa in your diet! It is also very versatile: you can eat it alone as a side dish, like rice, or in cold or warm salads.

Use your imagination and combine it with grilled vegetables, different fruits, turkey, tuna, shrimps, and with traditional dressing or with spices, mustard, honey...

I show you some pictures of today's recipe, which is very, very simple, so you can learn how to cook it and eat it cold for the summer, and another one I made with turkey and strawberries in a small glass.

INGREDIENTS: ( 4 persons)quinoa salad with apple, avocado and walnuts
  • 1 cup of quinoa ( approx. 150gr.)
  • 1 avocado
  • 1 red onion
  • A handful of walnuts
  • 1 apple
  • 4 tablespoons extra virgin olive oil
  • If in season: 6 strawberries
  • 1 tablespoon balsamic vinegar
  • Salt
STEP-BY-STEP PREPARATION:
  1. The quinoa wash it well under the tap until it stops foaming, then boil 2 cups of water, add a teaspoon of salt and the quinoa and leave over medium heat until all the water is absorbed, about 15 minutes approximately. Cover and let cool.
  2. Peel the avocado and cut into cubes and sprinkle with a little lemon juice to prevent oxidation. Do the same with the apple and strawberries if they are in season.
  3. Cut the onion into julienne strips.
  4. Place the quinoa, the chopped walnuts, and the rest in a bowl with the olive oil, vinegar and half a teaspoon of salt and stir.
