Cheese cake with muesli, walnuts and berries without oven
Now in summer, fresh desserts are in season, and this one cheesecake with muesli, nuts and berries without oven, is an ideal option for a cheesecake that can be made in a jiffy and sets in the fridge, so we don't have to turn on the oven because it's hot enough as it is!
This cheese recipe is also a healthier option, as it uses oats, nuts and berries, which will provide us with lots of fiber, vitamins and omega 3. Are you seduced? Then let's get to work:
INGREDIENTS:
These ingredients are enough for 4 or 6 cups, depending on their size or how much you fill them. It can also be made in tart format,
using a 16 cm diameter mold:
- 250 gr cream cheese spread (you can use the light one)
- 200 ml of liquid cooking cream
- 150 ml of semi-skimmed cow's milk or any vegetable milk
- 1 teaspoon of stevia or sweetener of your choice or 100 grams of sugar
- 1 sachet of Royal curd powder
- 60 gr of muesli or oatmeal in flakes
- 4 whole wheat crackers (the ones you like the most)
- 30 gr of nuts
- 30 gr honey
- 2 tablespoons milk (the same as above)
- Optional : raspberries, blueberries, mango spheres.
STEP BY STEP RECIPE:
- I used a thermomix, but if you don't have one you can use a blender and a saucepan or pot. You will see how easy it is. The first thing we will do is to grind the muesli or oat flakes, cookies and nuts until it is well crushed but not to the point that it is powder, better with small pieces.
- Add the honey and milk and beat again and it will become a sticky paste. Spoon a little into the cups you are going to use, they can also be mini molds, or fill the base of a traditional round cake pan of about 16/18 cm in diameter. Press with a spatula or your hand so that it is well stuck and compact.
- If you have used the Thermomix, wash it and add the rest of the ingredients for the filling: cheese, cream, milk, sugar or sweetener and the sachet of curd. Beat and then program 3 minutes at 100ºc. Then fill the cups. If you do not have a thermomix, put everything in a large saucepan, turn on high heat and stir with a whisk until creamy. As soon as you see that it starts to boil, remove it or pour it over the glasses.
- Let them cool a little and then put them in the refrigerator for at least 4 hours so that they set well and stay very fresh.
- Garnish with berries, or the chopped fruit of your choice and ready to eat!
